Vinification
Soft pressing is followed by maceration for about 15 days. After racking, the wine rests in stainless steel tanks at a controlled temperature (20°C} and then completes the alcoholic and malolactic fermentation. The wine is racked and then bottled; followed by bottle refining
Tasting notes
The color is ruby red with garnet highlights. Aromas of violets with hints of currant, blackberry, raspberry and spices . Fruit-forward and smooth on the palate with fine tannins and balanced acidity. Dry persistent finish. More complex notes (leather,tobacco, spices) develop with age
Food pairing
Soups, pasta dishes with meat sauce, roast/braised meats and wild game. Ideal companion with medium-aged cheeses and charcuterie
