Vinification
Soft pressing and racking, followed by fermentation at controlled temperature (12- l4°C) for about 10 days. Afterwards it is carried out the the refermentation in autoclave following the Charmat Method. The wine rests in stainless steel tanks at controlled temperature to be then racked and bottled; it follows a short refinement in bottle
Tasting notes
The color is bright straw yellow. Fine persistent bubble structure. Vinous aromas of pear,apple and citrus with hints of wisteria flowers and hawthorn. Bright and lively on the palate with clean effervescence
Food pairing
Ideal as an aperitif, it goes well with risotto (with radicchio and mushrooms), soups and white meats. Perfect pairing with fish (molluscs, crustaceans, seafood)
